When the weather is quite warm, all I need is this water melon and feta cheese salad. It seems so perfect and refreshing to enjoy for an opening of evening meal, or for snack in the afternoon. If you never tried this before, I really encourage you to do so. Although, it is stil pretty uncommon in The States, I heard it is quite popular in some other part of the world.
No exact recipe will be given here, basically you will need the ingredients listed below. You can omit fresh mints, and use any herb of your choice, or no herb at all. You can even just have watermelon and feta cheese only, and it will be still superb.
Watermelon and Feta Cheese Salad
Adapted from Ottolenghi's
Ingredients:
watermelon
feta cheese
a sprig of fresh mints, optional
freshly ground black pepper
olive oil
Cut watermelon into bite size and place it in a large bowl. Crumble feta cheese and add it to the bowl, scatter fresh mints on top, season with freshly ground black pepper, then lightly drizzle olive oil. Serve immediately.

I've been intrigued about watermelon in salads for a couple of years now - your combination with feta seems absolutely perfect!

I have not thought of making salad with watermelons as I thought they are too juicy for that! Must give it a try! Unusual combination with feta, looks good though.
