Japanese Beef Curry, Not Too Spicy and Highly Addictive



I was thrilled when I saw a video of Mark making this curry, so I decided to give it a try. For the first time I conjured up the most delicious homemade Japanese curry. I used beef shanks for this recipe, but like what he said, you can use any type of meat, poultry, or you can even turn this curry into a completely vegetarian meal. I also cooked the roux a little longer, resulting a much darker curry. One little obstacle was that I had trouble of finding tonkatsu sauce, I did find a bottle of katsu sauce, which I am not entirely sure what the different between tonkatsu and katsu. The recipe only need 1 tablespoon of this sauce, that leave me with a whole bottle of katsu sauce, I don't even know what I am going to use it for. I better e-mail him and ask for advice what to cook next with this sauce. Thank you to Mark for sharing the recipe, and show us how to make the authentic Japanese curry.

It looks wonderful, I really like the look of the dark sauce! I have made my own tonkatsu sauce:
3/4 cup ketchup
4 teaspoons dry mustard powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground black pepper
3 tablespoons Worcestershire sauce

Many other things you can add for your own taste too- ginger, mirin, sake, chili etc...

Thanks for stopping by my blog! Japanese curries have some very interesting very international history. They are very different from Indian and other southern Asian curries. I've been fascinated with them!
I do have a couple of curry recipes / dinners if you'd like to look…

Tonkatsu sauce, yum. My recipe (as many / most recipes early in my blog) is excellent: Hiroko Shimbo includes it in her book. With:
Worcestershire sauce, sugar, shoyu, ketchup, French mustard, ground allspice.

(Once when I was lazy, I bought a non-Bulldog brand and found it very much too sweet.)

Tonkatsu sauce is usually served with various yoshoku-style fried foods: chicken or pork cutlet, croquettes, or other fried food.

I don't think it is so very Japanese, but the sauce is good almost anywhere you would use ketchup. on fried potatoes, hamburgers, hot dogs, sausages, though I haven't tried it on pasties…

Now that is a dish I could see myself making, I am so afraid of curries and I dont know why. I do know what Katsu sauce is, they serve it alongsize a breaded chicken cutlet here locally :)
