Delicious and flavorful. If you don't like to see the fish's head and tail, you can ask your fish monger to get rid of them. I know for sure that my nephews (7 and 5 years old) won't want to eat this if they see the entire fish. So, I am hoping that my sister will cook this without first showing this post to them. Or else, they'll refuse to eat...
2 cleaned and boned whole trouts, about 12 ounce each
1 recipe for spiced couscous (you will have some left over)
¼ cup chopped parsley
¼ cup chopped cilantro
¼ cup chopped mint
¼ cup pine nuts
salt and pepper to taste
a few tablespoon olive oil
2 or more slices of lemon, optional
- Preheat oven to 400⁰F
- Add the parsley, cilantro, and the mints to the couscous, mix well.
- Arrange the trouts on a baking pan, season with salt and pepper, and fill each trout with couscous as much as you can fit into the cavity, add lemon slice (s), and the pine nuts. Bake for 20 minutes, or until the fish flakes when tested with a fork. Serve with simple saute leafy green vegetables such as spinach or swiss chard.
My most favorite favorite color among all calla lily.

I love cous cous!!
Yum!! Whole trout and couscous? Now I can go for that.
Now that's the way to eat fish! In its entirety. Beautiful execution and presentation. I wish I had a seat at the table.
The mint is great! What a fab color to this dish. Very healthy. Although intact fish heads are scary, we'd get a few bites in.
wow - i love recipes like this. simple and light, yet tons of flavor.
Elra, this is one spectacular meal!!!!! I love all the ingredients that you have used, but combined, it must have been so delicious!!!
This whole meal looks gorgeous. I wouldn't mind digging into that for our next dinner. Great post, Elra!
The couscous stuffing is fabulous! You know I'm always afraid to make whole fish but this is very inspiring for me to try it. I just love this presentation!
yumm yummm.. love the idea of baking fish.. simple and delight.. so colorful.. stunning photography :)
cheers!!
You are so good at preparing fish - it looks great!
My husband is such a little baby, and will not eat a fish if the head and tail are on. So silly. I think it's a beautiful way to present it!
I love fish-this reminds me of my grans stuffed mackerel :)
Ooo this looks gorgeous! Although I will admit that coking a whole fish kind of scares me. I would definitely be that person who has the fishmonger cut the head off.
GORGEOUS. I actually have never cooked a whole fish, but my dad does that quite often.
Such wonderful shots of the dish! I don't mind heads and tails =)
Wow that looks wonderful I had not thought of stuffing trout with couscous, great idea!
A delicious dish and a stunning flower picture! wonderful!
Cheers,

If this was the main course and that fruit tart was dessert, I'm sure everyone at the table was in...heaven! :)
OOOOOH,....Elra! These photos make my mouth water,....excellent! fabulous recipe!!
MMMMMMMMM....could you fly over to Brussels & make this dinner for you, me & my husband? It is so summery,....!!!!
Simply gorgeous food to look at! The head? NOpe...did not grown up with that...grin. But truly....it is a fine fine presentation and the couscous is to die for!
WOW, this looks amazing! I have never made a whole fish like that before, but it looks really delicious. The filling sounds so tasty!
What a great meal! I've been wanting to cook more trout, and this sounds perfect.
What a fantastic meal. I love the idea of stuffing it with couscous.
The calla lily is beautiful!
I guess you have been into exotic -North Africa cuisine and food!
I like your stuffing must be great also with Quinoa grains. I am a meat/ chicken/ sausage Morocan wit semolina Couscous fan. My mother used to live in Morroco when she was little and she makes the best Coucous dish...I love couscous as my kids but my DH not really so sometime I make a couscous pot for myself with butter so Yummy!
Oh the lily and photos are fanfabulous! I must learn from you!!!! I know I am late please accept my apologies = )
P.S. You will receive some goodies soon = )

mmm - the fish looks so delicous; crsip on teh outside and succulent on the inside. Perfect!
I love couscous, I've never thought of stuffing seafood, I've only made peppers stuffed with couscous and they were good, I can imagine how much better and more nutritious this is!
Delicious trout with couscous.Great colors for wonderful picture.
Love the Lily flower.
Oh wow the trout stuffed with couscous looks very delightful and I did love to sneak in and have a few trouts!!!
I bet once your nephews are a bit older, though, they'll take grim pleasure in leaving the fish head on and devouring the creature. :)
although this is a delicious idea, i have to admit that there's something about seeing a whole fish, eye sockets and all, on a plate that kinda dampens my appetite. i'll have to remember that when i'm in a binging mood. :)
This looks like its bursting with so much flavor..
I get excited anytime someone cooks with whole fish! Trout is one of my faves and you did it justice.
That is one pretty trout! I could definitely go for this :)
wow, those are some bold photos. i think i'd like this very much.
Beautiful pics and so sad that many people are scared of the head on fish.
Nicely done!
Even with the head of your fish, your meal is fabulous ! spiced couscous, hummm
I had a whole fish at a cuban restaurant recently and it was delish and I didn't mind the head and eyes at all. But I understand those who would mind. This looks delicious!!!
Hello,
My name is Amy Buisman. I currently go to Alfred University and I am a graphic design student. I have a senior show (BFA thesis Exhibition) at the end of the early and I am creating a restaurant with menus and a cookbook. I found some great images on your website. I would like to know if I could get permission to use them. I would have an acknowledge page of your site and name. With the senior show some people ask to buy things and I wanted to get permission if I could use your image.
Thank you
Amy Buisman
Hi Amy,
Thank you so much for your interest and thank you for asking. I tried to open your link, it doesn't work, is there any way to communicate with you? Do you have other blog that I can visit?
Anyway,
yes, you have my permission to use my images. I wish you luck with your exhibition.
Cheers,
elra
